Amylose Vs Amylopectin:
Polysaccharides have two types one is amylose and the other one is amylopectin which can be found in starch granules. Amylose and amylopectin both are quite different from each other in their structure and chemical features. The major difference between amylose and amylopectin is that amylose is generally a straight chain polymer while on the other hand amylopectin is commonly a branched chain polymer. The amount of amylose is 20% in starch and 80% of amylopectin.
Amylose is a type of polysaccharide which is made up of A D glucose units. The units of the amylose is bonded together with each other with the help of glycosidic bonds. It is usually one of the two components of the starch which makes up approximately 20 to 30%. Usually amylose is soluble in water. Because of its tightly packed helical structure. Amylose is a very resistant starch.
Amylopectin is another type of polysaccharide and is soluble in water. Amylopectin is a highly branched polymer of glucose units and is commonly found in plants. Starch has two components one is amylose while the other one is amylopectin. Plants contains amylopectin while animals contains glycogen.
Main differences between Amylose and Amylopectin:

- Amylose is a straight chain of polymer made up of D glucose units while on the other hand amylopectin is a branched chain polymer and it is also made up of D glucose units.
- In starch the amount of amylose is 20% while on the other hand the amount of amylopectin in starch is 80%.
- Amylose have a straight chain structure while on the other hand amylopectin have a branched structure.
- Amylose is less soluble in water while on the other hand amylopectin is more soluble in water.
